“Green Means Good”

It’s a saying in our house, meaning that if it’s green it must be good, excluding the green growing on our bread!

We all know that green vegetables are good for us, but how often do you eat them?

My kids have their favorites but it’s hard to get in enough green vegetables into our bellies as well as our kids.

With St. Patrick’s Day around the corner there’s plenty of creative ways to sneak in ‘green vegetables’ in healthy ways and not use artificial food coloring to make things green.

Green Pancakes

They don’t look that green in this picture but I assure you, they were green enough that my kids were asking what was wrong with them!

Did you know you can use green juice in place of water when making pancakes to make them green (ish)? That is, if you’re not being a supermom and making them from scratch. Kudos to you!

After you coat them in grassfed butter, real maple syrup and sprinkle of powdered sugar they won’t be able to taste the difference.

I use this gluten free mix. It’s always a crowd pleaser and kids friends haven’t been able to tell they’re GF. Gobbling them up, even asking for seconds.

Our favorite green smoothie

I just loved the sun shining in through the window highlighting this gorgeous smoothie.

1 large handful (or two) of raw spinach

1 cup of frozen mangos

1 banana

½ cup of water or milk

Raw shelled pumpkin seeds (optional) I like to sneak these in.

Honey (optional) we don’t add honey but my kids are used to smoothies that are not too sweet, add it if you need to.

The Healthy Shamrock Shake

¾ cup milk (I use coconut)

A scoop or so of vanilla ice cream

1 cup of spinach

10-15 fresh mint leaves

½-1 cup ice

Top with some whipped cream and mini chocolate chips.
